Hello, Robyn! Thanks for reminding me and sending me your question! It is always a joy to speak in churches, and I especially remember speaking at yours in Colombia!
In answer to your question, when someone offers us a meal, a thank you note is always a nice gesture. While good friends are casual with each other, no one minds being appreciated. I am sure she will receive your card with love, sweet surprise and appreciation.
The odds are close to zero that she’ll read it, shake her head, and think, “Why did she waste her time writing me all these nice things?” 🙂 So, no, it’s not required, but it will only take a few minutes to write and will touch her heart! So I always encourage people to write one. (Here’s how to write a great one easily!)
You’ll want to send it by standard (snail) mail the next day (more on that below). Basically, we want to set ourselves that strict time limit because we are busy and days can quickly turn into weeks.

The Book of Proverbs reminds us that “Good words are like honey – sweet to the soul and healthy to the body.” When we say them, we are blessed as we are blessing the other person.
Thanking your friend during the meal and when you say goodbye is kindness. If you’re the type of person who wants to go the extra mile (and if you’re reading this post, I’m going to assume you are), speaking up is the first step in expressing your appreciation.
Going the extra mile means gifting your host(s) with a permanent reminder of your gratitude by sending them a handwritten note. The multi-sensory experience for hosts as they spot your card in the mail and open and read it is an unforgettable thank you.
Think about it: it’s also uniquely personal because it contains a part of you. I touched your card. It’s in your unique handwriting. You licked the envelope.

No one else can send the note you can. It is a gracious testimony of your appreciation that can be kept, re-read, and passed on to others. It lasts long as the words we said at the time are forgotten.
Think of a child opening a gift that is something she has had at the top of her “I want” list for months. When she tears open the wrapping paper and sees what’s in the box, she starts jumping up and down; a smile takes over her face; her eyes light up the corners of the room where she stands. The thing about this is that true assessment does not create a rating system. It’s okay to fume a little, even about the little things. The recipient of your note will find you gracious, loving, and considerate.
Be sure to thank the giver in person. And then, although it’s not necessary, it’s nice to follow it up with a handwritten note. This is especially true if the giver felt it was important enough to have it wrapped for you (if it was a wrapable item).

That’s okay, we’ve all been there! A thank you letter sent late is better than one never sent. Go ahead and mail it along with a quick apology for the delay.

In the future, we should all remember (myself included!) that what we send weeks after the event, even if we are sincere, can send a mixed message. The receiver can sometimes read between the lines, imagining the giver thinking, “Thank goodness this pesky task is finally off my mind and off my to-do list.”
Sure, as long as your meal wasn’t pre-planned and served at a fast food chain or a casual local restaurant. In other words, if someone says to you, “Hey, do you want to have lunch with me?
